Finca Doña Débora is located in El Carrizal, Plátanos, Corquín, near the Guatemalan border in Honduras' Copán region. The farm has been in the Maldonado family for three generations, starting with Benjamin's grandparents, who established a coffee plantation in 1943. Now managed by Benjamin, the farm focuses on socially and environmentally responsible coffee production, preserving natural habitats and biodiversity. The coffee is grown under shade, protecting insect and bird populations that help control pests and pollinate crops.
This small-batch lot is produced by Benjamin using the Pacamara variety, a hybrid of Pacas and Maragogipe. While it yields less, it offers exceptional quality. The cherries are hand-picked, naturally processed on drying beds, and rotated to prevent mould. They are then dried in a solar dryer to reach a moisture content of 10-11.5%.

TASTING NOTES
The coffee has an intense, complex aroma, with elegant acidity, creamy texture, and wild flavours, shifting from tropical fruits like pineapple and strawberries to a sweet finish of butterscotch and milk chocolate.
